Curry Masalas

It has to be said that here at Trimilawn we really enjoy a good curry. From a hot Madras to a mild vegetable curry nothing tastes as good as one made with lots of good spice and love.

Masalas are simply a blend of the traditional spices requied to create a curry. We stock seven different masalas from a very mild curry powder to a hot Madras. These masalas are freshly blended and unlike shop bought "curry powders" are packed with flavour and aroma. If you are short of time these masalas take all the effort out of creating a delicious meal. Now we know there are hundreds of recipes out there to choose from but here is our fool proof recipe using any of our masalas..


Serves 2 - 3

 

2 finely chopped red onions

1 clove of garlic finely chopped

1 piece of root ginger, thumb size, peeled and finely grated

As many or as little green chillies as you like finely sliced

2 large tomatoes deseeded and chopped finely

190ml of water

2 teaspoons of your chosen Trimilawn Curry Masala blend

Method

Gently fry your onions in a little vegetable oil until very soft and translucent. Add the ginger, garlic & chilli and fry for a minute or two. Add the chopped tomatoes and cook for about four minutes until soft. Add the Trimilawn spice blend and fry for a further two minutes. At this point we like to pop it into a food processor and give it a good whizz but you could simply squash it with the back of a wooden spoon till smooth. Add the meat/fish or veg and fry in spice mix until almost cooked. Finally add the water to make the sauce. (Adjust accordingly). Once the dish is cooked fully add some fresh coriander and serve with Basmati rice and chapatis.
